“You have to accept the cow’s kicks just as you accept its milk and butter.” If this Hindu proverb is to be believed, you have to suffer in order to enjoy yourself. In any case, that is not the spirit of this trip, which we want to be fulfilling, but above all a delight for the senses. To achieve this, we have designed a bold itinerary that takes you from northern India to the coastal region of Goa in fifteen days, passing through the mythical Rajasthan. Along the way, you will meet producers, vendors, artisans, cooks and delivery people. These women and men who bring India to life and make it pulse with energy every day. With our senses on alert, we become acquainted with the places and their historical, culinary, and architectural heritage - with the spices that make Indian cuisine one of the most distinctive in the world, and with an ambiance that permeates ancient stones, rivers, paddy fields, palaces and temples. You land in Delhi, a vibrant capital divided in two. New Delhi, created by the British in the 1930s, is a district with wide avenues and well-kept gardens, a testament to former colonial power. Old Delhi, with its incessant bustle, is home to the picturesque markets of Chandni Chowk, Chawri Bazar and Phool Mandi (flower market), where thousands of people gather every day to buy fruit, spices, meat, kitchen utensils or rose petals. We then head towards Lucknow, the capital of Uttar Pradesh and the birthplace of Awadhi cuisine. A cuisine reminiscent of those of Kashmir, Persia and Punjab, focusing on cardamom, saffron and slow cooked food. Next stop: Hyderabad, an elegant city founded in the 16th century by aesthete princes, renowned for its diamonds and its own version of Silicon Valley. A new quick flight allows you to experience a completely different India - coastal, and lusitanian: Goa. This former Portuguese colony stands out for its remarkable architectural heritage - the Sé Cathedral, the Basilica of Bom Jesus - and its unique, gentle way of life. The streets are filled with the scent of spices grown in the surrounding area and fish, cooked here in every possible way. We travel by train to Mumbai for the aromatic grand finale of the trip. We hurry along the trail of the British colonists at the High Court, then on to Crawford Market, a late 19th-century covered market whose stalls overflow with spices, vegetables, jewellery and more… Just a few steps away, around the old “Victoria” station, the dabbawalas - meal couriers dressed in white - are getting ready to feed part of the metropolis.

Finally, in Mumbai, we have planned a unique activity that immerses you in the daily life of the city: you will follow in the footsteps of a lunchbox delivery person, known as a dabbawala, during their route. Curries, of course: chickpea (chole bhatura),paneer (cheese that doesn’t melt), mutton or goat (laal maas); lentil dhal; meat cooked in a tandoor oven; murgh makhani, chicken prepared in a rich sauce made with butter, onion, and yogurt; besan gatte ki sabzi, chickpea flour dumplings cooked in a thick tomato-based sauce; kachori, fritters filled with lentils or onions, usually served with chutney; sorpotel, brought to Goa by the Portuguese, who themselves brought it from Brazil where it was cooked by African slaves—a dish of pork meat and offal cooked in a tangy, spicy sauce; pork vindaloo, meat curry marinated beforehand in palm vinegar and garlic; gongura pickles, tangy sorrel leaves; kismur, a salad of dried fish and coconut; missi roti, a spiced flatbread (notably with fenugreek); churma ladoo, small fried balls made from wheat flour, ghee, and cardamom; gulab jamun, dumplings made with curdled milk soaked in rosewater and saffron syrup; bebinca, a cake made of several sweet layers with jaggery; kheer, rice pudding flavoured with cardamom and topped with raisins, pistachios, and cashews; ghewar, a festive pastry made from ghee, sugar, flour, and syrup, often drizzled with condensed milk.

And not just in the imagination, but in reality: the country is one of the world’s largest producers of spices. These, unsurprisingly, are ever-present in the national cuisine. Delhi’s spice market, located near the Red Fort, dates from the 17th century. Considered the largest market in Asia, it’s full of colour and the scent of herbs, dried fruits and colourful spices. Things to see and do in Delhi - Stroll along the wide avenues and through the well-maintained gardens of New Delhi; visit Humayun's Tomb, whose Mughal-style dome inspired the Taj Mahal; stop by to admire the Qutub Minar, a 236-feet-high (72metres) red sandstone tower built in the early 13th century and adorned with calligraphic verses from the Koran.
Private transfer to the station and train to Lucknow, capital of Uttar Pradesh. Meet your driver for the next two days; transfer and check in at a historic hotel with Anglo-Indian heritage architecture for two nights. Behind the Art Deco façade, high ceilings soar above spaces furnished in 1930s style. The rooms reflect the spirit of those times, with carved headboards and embroidered cushions. Outside, you’ll find lush gardens and an assortment of patios. A swimming pool completes the picture.

Influenced by the flavours of Kashmir, Persia and the Punjab, Awahdi cuisine is based on a slow cooking method that preserves the flavour of the ingredients and uses spices like saffron and cardamom. Take a stroll to sample some of the most delicious specialities in different traditional restaurants.
Things to see and do - Explore the old town, a reminder of British colonisation in the Victorian era, and discover the market and the streets of the modern city. Stop for a cup of Darjeeling tea.

The capital of Andhra Pradesh, Hyderabad was founded in the 16th century in the time of the Qutub Shahi dynasty, whose rulers were renowned for building monuments, particularly mosques, of great beauty. Given its geographical location, the city quickly grew in military importance, and also became famous for its magnificent diamond market. In fact this is where the famous Kohinoor diamond came from. Today, while still preserving all the traces of its historical past, the city is a modern metropolis - the second “Silicon Valley” of India, after Bengaluru.

On your itinerary - A day dedicated to Goa and its spices
. Goa was once a Portuguese colony, and the region has retained many of its colonial buildings, which today stand alongside Hindu architecture. North of Ponda, the Shri Mangueshi Temple stands perched on a hill, a beautiful example of Hindu architecture. You’ll also visit the Shri Shantadurga temple before exploring the local speciality: the cultivation of spices. For this, you’ll head to a spice plantation where cardamom, vanilla, cinnamon and the medicinal plants typical of the region are grown. Next, you’ll be visiting the Basilica of Bom Jesus and the Sé Catedral de Santa Catarina, the largest of all the churches in Old Goa.

Private transfer to the station and train to Mumbai. Another private transfer and check-in for a two-night stay in a former colonial house in the historic city centre. Converted into a hotel, it’s very close to the entertainments the neighbourhood has to offer, but at the same time set back from all the hustle and bustle. Here, a new shop or bar pops up every week! A buzzing metropolis on the shores of the Arabian Sea, Mumbai (formerly called Bombay) is a city of contrasts. It embodies India’s industrial success, the glitz of Bollywood cinema, cricket, and a rich past coloured by significant British influence.
On your itinerary - A private tour with a dabbawala. Dabbawalas are itinerant vendors, and the word in Hindi literally means “one who carries a box”. Every single day in Mumbai, some 2,000 dabbawalas deliver around 200,000 meals. Get an insider look at the intricate “ballet” performed on a daily basis by this small army of men dressed in white as you accompany one of them on his rounds, after watching the goods being loaded onto the train that takes you to Churchgate, where the sorting and distribution of meals takes place. A real, unvarnished dive into the India of today.

Must-see - The Zaveri Bazaar, which became the epicentre of Indian maritime trade under British influence. This neighbourhood offers a glimpse of the eastern part of Mumbai, and the legacy left by merchants from neighbouring Gujarat.

Closing ceremony at Gurudwara Bangla Sahib temple in Delhi

In 1783, under pressure from a Sikh leader, Emperor Shah Alam authorised the construction of Sikh temples. This is how the Gurudwara Bangla Sahib, the largest Sikh temple in Delhi, came into being - a place where an atmosphere of great devotion prevails. Prayers, prostrations and offerings are ritually performed by the many devotees who gather before the Granth Sahib, the Holy Book. Every evening, after sunset, this sacred book—the principal object of worship in a gurudwara—is ceremoniously brought back to its room for the night in a ritual procession in a palanquin, accompanied by singing. You attend this ceremony in the company of a guide, with whom you visit the entire site.
