In Japan, more than a century ago, a fifth miraculous flavour was added to the famous quartet of salty, sweet, sour and bitter: umami:, which could be translated as “savoury taste”. Umami is difficult to describe. It's the flavour found in traditional kombu dashi (seaweed broth), miso or soy sauce, but also in tomatoes, salt cod, parmesan, tempeh or certain types of ham. In daily life, this is reflected in Japan by a constant pursuit of perfect harmony in meals. However, it is impossible to sum up Japan with just one type of cuisine, and this trip is designed to show you just that. So you’ll be making a stop on Kyushu Island before exploring the south of Honshu, like explorers of taste. Introduction to Fukuoka the largest city in Kyushu, still imbued with Chinese and Korean influences. The architecture is striking, the craftsmanship vibrant, the atmosphere gentle, and theyataisplentiful. These mobile street food stalls set up every day in the neighbourhoods of Tenjin, Nakasu and Nagahama,serve Hakata ramen, gyoza and udon. By train, you reach Honshu Island and Hiroshima, a city whose story goes far beyond the memories of World War II. Here, you can savour the local art of living (and eating): oysters, anago (fish) and ramen tantanmen, between visits of exhibitions and a getaway to the sanctuary island of Miyajima. Next stop: Kobe,whose beef has long been renowned for its quality. As you wander through charming alleys lined with historic buildings, the secrets of this dish are revealed. The whole world is talking about the immense privilege of tasting it on site. Next, head to Osaka,, often overlooked by travellers but in fact a major foodie destination. For it was in Osaka that takoyaki, the the famous crispy octopus balls, were invented, as well as okonomiyaki, delicious yam flour pancakes topped, among other things, with shredded cabbage. Tadao Ando’s home town also presents a constant urban spectacle, blending futuristic skyscrapers, lively neighbourhoods, and peaceful riverside parks. The culinary journey continues inShizuoka, on Suruga Bay. A region covered in forests, tea plantations and wasabi fields, set against a blue backdrop - the sky, the sea and the iconic silhouette of Mount Fuji. At the foot of the sacred mountain, visitors learn how some of the basic ingredients of the national cuisine are cultivated and distilled. A thrilling, bold, innovative and sometimes excessive epilogue to the trip, Tokyo makes your head spin like fine sake. In the capital, flaunting the most Michelin stars,, every type of cuisine is represented. Sometimes quite eccentric dishes can quickly become the talk of the town. Harajuku and its cosplayers, Shinjuku and its pocket-sized bars, Tsukiji Market and its fish, Omotesando and its boutiques, Shibuya and its karaoke bars… Each district is fascinating and has its own particular flavour. No sooner have you arrived in Japan than you’re already getting around like the locals, thanks to the Japan Rail Pass. It allows you, among other things, to take the metro to your hotel - a modern establishment in Hakata, with comfortable, well-equipped rooms where you'll settle in for two nights. From the very first breakfast, you can either dive straight into Japanese cuisine or opt for something a little more Western, depending on your mood.

Kyushu’s largest city, Fukuoka is nonetheless gentle and picturesque, with craftsmanship still very much in the spotlight. History, too, is everywhere: in the castle walls, the museums, the Kushida Shrine with its wooden buildings and beautifully aligned torii gates, and Tôchô-ji - five levels of crimson and Japan’s largest wooden Buddha, unshakable and serene. Fukuoka is also famed for its many yatai - street food stalls offering local and international specialities. Sample ramen, udon, yakitori, and gyoza, hopping from stall to stall to broaden your culinary knowledge.
See and do - Stroll through the Tenjin shopping district; visit the Fukuoka City Museum, dedicated to life on Kyushu; explore the Hakata Machiya Folk Museum, which looks back at the city’s rich past through artworks from the Meiji and Taisho eras; climb Fukuoka Tower for panoramic views over the city and beyond; wander the Nishijin and Yanagishabi markets or urban parks such as Yusentei, Ohori, or Rakusui-en; discover the futuristic Canal City Hakata; or find a moment of calm at the temples and shrines of Shofuku-ji, Sofuku-ji, Tocho-ji and Kashii.

Train to Hiroshima then check in for two nights at a welcoming hotel with elegant, minimalist rooms, and a few surprises in store: an art gallery showcasing various local artists, and a rooftop bar with panoramic terrace views. Perfectly located, it is only a short walk across the river to the Peace Memorial Park, home to the museum commemorating the atomic bombing of 6 August 1945 and the Genbaku Dome, ruins of the Industrial Promotion Hall.
Evening programme - Night stroll in Hiroshima with a local guide. Explore the city with a local expert. Uncovering favourite spots and hidden gems, while sampling traditional dishes such as okonomiyaki, tsukemen, tantanmen, oysters, anago, and even locally brewed gin.

Not to be missed - A day on the island of Miyajima, also known as Itsukushima, in the Seto Inland Sea. This is a major spiritual centre, a Shinto shrine dating back to the 4th century and listed as a UNESCO World Heritage site. Admire the many exceptional monuments, including the famous floating torii. When Mount Misen calls, you can answer by either hiking up on foot or taking the cable car to enjoy a superb view of the surroundings. On the way back down, take the opportunity to visit Daisho-in Temple or wander the forest paths among the freely roaming deer.

Kobe, world-renowned for its beef, is a cosmopolitan port city that can be best experienced in the Kitano (Western) and Nankinmachi (Chinese) districts. Wander through Meriken Park on the waterfront and climb the Port Tower for striking panoramas. 
On the programme - A gourmet tour focused on Kobe beef and sake, with a local guide. Walk through the maze of Kobe's historic streets, lined with old buildings, until you reach a restaurant renowned for its Kobe beef, cooked in front of you on a hot plate. Every cut, marbled to perfection, melts in the mouth, showcasing why it is celebrated across the globe. Next, visit a nihonshu (sake) distillery in the historic district, where you will uncover the secrets of how this traditional Japanese rice alcohol is made, and sample several varieties.
Night
in a modern hotel located near Sannomiya Station. Rooms are contemporary, simply and elegantly decorated, and fully equipped. The property also offers a gym, bar-restaurant. In fine weather, breakfast is served outside on the terrace.

Train to Osaka. Often overlooked by travellers, Osaka is more than a major economic hub: it is a city full of creativity, perfectly illustrated by the work of Tadao Ando, a native architect of international renown. There is also the Bunraku puppet theatre, performed by skilled hands since the 17th century, the energetic Dotonbori street, and the Tsutenkaku Tower, which rises over 100 metres (328 feet) above the neighbourhood. And don't forget the street food, which plays a central role in Osaka’s life. Try local specialities like takoyaki (octopus-filled balls), okonomiyaki (savoury cabbage pancake with sauce), kushikatsu (breaded and fried skewers), taiko-manju (bean paste sponge cake).
Check in for an overnight stay at a contemporary hotel designed by an English artist. Rooms are inspired by the modular design of Japanese bento boxes, with touches of colour reflecting the dynamism of the city.

Train to Shizuoka for an overnight stay. The region is lush and green, with forests, tea plantations and wasabi fields, set against a backdrop of blue - the blue of the sea, and of a silhouette known around the world... Perched high above the city, your hotel has a unique advantage: the imposing Mount Fuji. From the elegant and spacious guest rooms, the restaurant and even the large green garden, the sacred mountain can be admired from every angle.
See and do- Visit Nihondaira Yume Terrace for a 360° panorama over the bay and Mount Fuji; take the cable car down to Suruga Bay; explore a local cider distillery and taste the produce; discover Kunozan Tosho-gu shrine, decorated with intricate wood carvings, black lacquer paintings and gold leaf.

In the itinerary - A day that's all about "green", focused on tea and wasabi. Accompanied by a guide, it's time to deepen your knowledge of two quintessential ingredients in daily Japanese life: green tea and wasabi. The first, particularly suited to Shizuoka’s mild climate, has made the city the national capital of tea. During the tour of a factory, you are shown the different stages of the production process, from leaf to cup. Afterwards, you will set off for a walk through verdant fields along the Abe River. These are wasabi plants, still cultivated in large quantities in the region, by hand and using methods passed down from generation to generation for centuries.
At the end of the day, you will take the train to Tokyo and check in for three nights in the heart of the vibrant Kabukicho district in Shinjuku. This prime location is right in the heart of lively streets, filled with bars and restaurants. The hotel is modern and elegant, with rooms featuring colourful carpets, wood paneling and large windows that look out over the bustling streets and buildings below.

Tokyo is a thriving, modern city where trends, technologies, games, and even its cuisine are constantly evolving. But it's also a city of tradition. The surviving narrow alleyways of Golden Gai in Shinjuku, for example, are home to around 200 tiny bars where people pack in together in a cosy, convivial atmosphere. And if Tokyo is the city with the most Michelin stars in the world, it’s because it truly excels in its range of culinary offerings, with no fewer than 98,000 restaurants. From yatai to yatai, an introduction to Fukuoka’s street food

In Fukuoka, street food stalls are called “yatai” and every day they feed the city's workers, families and students. You'll meet with an expert in the city and, above all, its cuisine. A national treasure, like Mount Fuji itself, Himeji-jô is a UNESCO World Heritage Site. This majestic complex is, for the most part, not a reconstruction. Built in the 14th century, it was altered over time and its current form dates from the 17th century.  Immaculate walls, curved roofs… This is one of the finest examples of castle architecture from that era. Here surrounded by magnificent gardens planted with cherry trees, it's easy to imagine samurai intrigues and battles. Made up of more than 80 buildings rising up to six storeys high, it is absolutely colossal and incredibly photogenic. It even regularly appears in films, such as the James Bond movie, You Only Live Twice (1967). A masterpiece.
